Sacred Slowdown Matcha Banana Bread
A soft, café-style banana bread with mellow matcha warmth, subtle sweetness, and little crunchy bites of cacao throughout.

Ingredients
- 4 ripe bananas, mashed
- 2 eggs
- 1/3 cup coconut milk
- 1 teaspoon vanilla extract or vanilla paste
- 1/4 cup coconut sugar
- 1 cup all-purpose flour (gluten free optional)
- 1/2 cup almond flour
- 2–3 tablespoons matcha powder
- 2 1/2 – 3 tablespoons cacao nibs
- 1 tablespoon of cacao powder
- 1 tablespoon chia seeds
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
Optional toppings:
- sliced banana
- Matcha powder
- cacao nibs
- flaky sea salt
- toasted coconut flakes
Instructions
- Preheat oven to 350°F.
Grease or line your loaf pan with parchment paper. - In a large glass bowl, mash bananas until mostly smooth.
- Whisk in: eggs, coconut milk, vanilla, and sugar.
- Add: flour, almond flour, matcha powder, chia seeds, baking soda, and salt.
- Fold gently until just combined.
Do not overmix. - Fold in 2 tablespoons of cacao nibs, saving a 1/2 – 1 tablespoon (small handful) for the top.
- Pour batter into lined loaf pan and sprinkle remaining cacao nibs on top.
- Bake for 45–55 minutes, until the top is golden and a toothpick comes out mostly clean.
- Let cool for at least 10 minutes before slicing.
- Top with your favorite toppings ghee, butter, banana slices, or greek yogurt and enjoy
Notes
- The flavor gets even better the next day.
- Almond flour keeps the texture soft and bakery-like.
- This tastes so good slightly warm with butter or greek yogurt on top, and a cup of tea or a matcha latte.
