Sacred Slowdown Matcha Banana Bread

A soft, café-style banana bread with mellow matcha warmth, subtle sweetness, and little crunchy bites of cacao throughout. 

  • Total Time: 1 hour

Ingredients

Units Scale
  • 4 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar or brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 23 tablespoons matcha powder
  • 1 tablespoon chia seeds
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 tablespoons cacao nibs

Optional toppings:

  • sliced banana
  • sprinkle of cacao nibs
  • flaky sea salt
  • toasted coconut flakes

Instructions

  1. Preheat oven to 350°F.
    Grease or line your loaf pan with parchment paper.  
  2. In a large glass bowl, mash bananas until mostly smooth.
  3. Whisk in: eggs, coconut milk, vanilla, and sugar.
  4. Add: flour, almond flour, matcha powder, chia seeds, baking soda, and salt.
  5. Fold gently until just combined.
    Do not overmix.
  6. Fold in most of the cacao nibs, saving a small handful for the top.
  7. Pour batter into loaf pan and sprinkle remaining cacao nibs on top.
  8. Bake for 45–55 minutes, until the top is golden and a toothpick comes out mostly clean.
  9. Let cool for at least 10 minutes before slicing.

Notes

  • The flavor gets even better the next day.
  • Almond flour keeps the texture soft and bakery-like.
  • This tastes beautiful slightly warm with butter or greek yogurt on top, and a cup of tea or a matcha latte.
