- 4 ripe bananas, mashed
- 2 eggs
- 1/3 cup coconut milk
- 1 teaspoon vanilla extract
- 1/4 cup coconut sugar or brown sugar
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 2-3 tablespoons matcha powder
- 1 tablespoon chia seeds
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 tablespoons cacao nibs
Optional toppings:

- toasted coconut flakes
Instructions
- Preheat oven to 350°F.
Grease or line your loaf pan with parchment paper. - In a large glass bowl, mash bananas until mostly smooth.
- Whisk in: eggs, coconut milk, vanilla, and sugar.
- Add: flour, almond flour, matcha powder, chia seeds, baking soda, and salt.
- Fold gently until just combined.
Do not overmix. - Fold in most of the cacao nibs, saving a small handful for the top.
- Pour batter into loaf pan and sprinkle remaining cacao nibs on top.
- Bake for 45–55 minutes, until the top is golden and a toothpick comes out mostly clean.
- Let cool for at least 10 minutes before slicing.
Notes
- The flavor gets even better the next day.
- Almond flour keeps the texture soft and bakery-like.
- This tastes beautiful slightly warm with butter or greek yogurt on top, and a cup of tea or a matcha latte.
