Love Letter Lemon Cardamom Cookies

Ingredients
Cookie Ingredients
- 3 cups whole wheat flour
- 1/2 teaspoon salt
- 1 1/4 teaspoons baking powder
- 1/4 cup poppy seeds
- 3 eggs
- 1 cup coconut sugar
- 1/2 cup coconut oil
- 1 teaspoon pure vanilla extract
- 1 tablespoon lemon zest
- 4 tablespoons cardamom syrup
- 1/2 cup butter, melted
Icing Ingredients
- 1 cup powdered sugar
- 1/4 teaspoon vanilla extract
- 1 tablespoon butter, softened
- 1 tablespoon cardamom syrup
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
- In a large bowl, whisk together the flour, salt, baking powder, and poppy seeds.
- In another large bowl, whisk together the eggs, coconut sugar, coconut oil, vanilla extract, lemon zest, and cardamom syrup.
- Pour the wet ingredients into the dry ingredients and stir with a spoon until just combined. Fold in the melted butter until fully incorporated.
- Scoop the dough into approximately 1-tablespoon portions onto the prepared baking sheets. For smooth, round cookies, roll each portion between your hands before placing it on the baking sheet. Space the cookies about 1 inch apart.
- Bake on the middle rack for 20–25 minutes, or on the bottom rack for 18–20 minutes, checking a few minutes early. The cookies are done when the bottoms are golden brown while the tops remain pale.
- Transfer the cookies to a wire rack and let them cool completely.
- Make the icing: In a medium bowl, whisk together the powdered sugar, vanilla extract, softened butter, cardamom syrup, and lemon juice until smooth, silky, and spreadable.
- Spread or drizzle the icing over the cooled cookies. If desired, garnish with a sprinkle of lemon zest or poppy seeds. Enjoy.
