Bright lemon cookies with poppy seeds and a silky cardamom glaze.

Some days call for a grand gesture. Others just need a really good cookie. These little love letters are bright, buttery, and created with love, to remind you that joy can be found in the simplest moments. Bake a batch, share them with someone you love, or keep them all for yourself. I don’t judge.

Ingredients

Cookie Ingredients

  • 3 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking powder
  • 1/4 cup poppy seeds
  • 3 eggs
  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon zest
  • 4 tablespoons cardamom syrup
  • 1/2 cup butter, melted

Icing Ingredients

  • 1 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon butter, softened
  • 1 tablespoon cardamom syrup
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large bowl, whisk together the flour, salt, baking powder, and poppy seeds.
  3. In another large bowl, whisk together the eggs, coconut sugar, coconut oil, vanilla extract, lemon zest, and cardamom syrup.
  4. Pour the wet ingredients into the dry ingredients and stir with a spoon until just combined. Fold in the melted butter until fully incorporated.
  5. Scoop the dough into approximately 1-tablespoon portions onto the prepared baking sheets. For smooth, round cookies, roll each portion between your hands before placing it on the baking sheet. Space the cookies about 1 inch apart.
  6. Bake on the middle rack for 20–25 minutes, or on the bottom rack for 18–20 minutes, checking a few minutes early. The cookies are done when the bottoms are golden brown while the tops remain pale.
  7. Transfer the cookies to a wire rack and let them cool completely.
  8. Make the icing: In a medium bowl, whisk together the powdered sugar, vanilla extract, softened butter, cardamom syrup, and lemon juice until smooth, silky, and spreadable.
  9. Spread or drizzle the icing over the cooled cookies. If desired, garnish with a sprinkle of lemon zest or poppy seeds. Enjoy.
