These homemade Blueberry Cream Pop Tarts are made with flaky puff pastry, a creamy blueberry filling, and a naturally vibrant frosting colored with butterfly pea flower powder. They’re easy enough for a weekend brunch yet beautiful enough to serve at a gathering.

Ingredients

For the Pop Tarts

  • 1 package puff pastry sheets, thawed according to package directions (13.2 oz)
  • 1 package blueberry cream cheese, softened (8-ounce)
  • 1 cup fresh blueberries
  • 2 tablespoons of pure maple syrup
  • 1 tablespoon lavender syrup (optional, but adds a lovely floral note)

For the Butterfly Pea Frosting

  • 1 cup powdered sugar
  • 1 teaspoon butterfly pea flower powder
  • 12 tablespoons milk of choice
  • 1 teaspoon of maple syrup

Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Set aside.  2. Make the Blueberry Filling

In a small saucepan over medium heat, combine the blueberries, maple syrup, and optional lavender syrup. Cook for about 5–7 minutes, stirring occasionally and gently mashing the berries with the back of a fork or spoon until they release their juices and become thick and jam-like. Transfer the cooled blueberry mixture to a bowl and fold it into the softened blueberry cream cheese until all is smooth and well combined.

3. Prepare the Pastry

Unfold the thawed puff pastry sheets and cut each sheet into 2.5 -3 in squares (12 rectangles total for 6 pasties).

4. Fill the Pop Tarts

Spoon 2 tablespoons of the blueberry cream filling onto six of the pastry rectangles, leaving about a ½-inch border around the edges. Top with the remaining pastry rectangles and press the edges together with a fork to seal. Cut two or three small slits in the tops to allow steam to escape.

5. Bake

Bake for 20–25 minutes, or until the pastries are puffed and golden brown. Transfer to a wire rack and cool completely before frosting.

6. Make the Butterfly Pea Frosting

Whisk together the powdered sugar, butterfly pea flower powder, maple syrup, and 1 tablespoon of milk (two if you need to loosen the consistency. Add additional milk, one teaspoon at a time, until the frosting reaches a thick but drizzleable consistency.

7. Finish

Drizzle the frosting generously over the cooled pop tarts and allow it to set for 10–15 minutes before serving.

Notes

  • For the puff pastry any will work, I used ‘Jus-Rol Flaky & Layered Puff Pastry Sheet, Pre-Rolled Refrigerated Dough’
    Cooking the blueberries first creates a rich jammy filling with concentrated flavor and helps keep the pastry crisp.
  • The lavender syrup is optional but adds a subtle floral note that pairs beautifully with blueberries.
  • The butterfly pea flower powder naturally creates the striking blue-violet frosting without artificial food coloring.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. Warm briefly in the oven or air fryer before serving for the flakiest texture.
